Slice your baguette into small 1/2 inch squares. You can let them dry out naturally for a day on a tray, or speed things up by drying them in a 200°F oven for about 1.5-2 hours.

Toss chopped apples with the flour, sugar, and spices. Melt butter in a pan, add water and cook till apples turn soft. Drain but keep the liquid.

In a big bowl, beat together eggs, milk, melted butter, vanilla, brown sugar and all your spices until well combined.

Spread bread cubes in a greased 9x13 pan. Top with your cooked apple mix. Pour the egg mixture all over, gently pushing bread down so it soaks up the liquid.

Pop in a 375°F oven for half an hour, then cover with foil and bake another 15-20 minutes. Drizzle the saved apple juice over the top when done.

Let it sit for 10 minutes before you dig in. It's great warm with a scoop of vanilla ice cream on the side if you want.
