Creamy NY Cheesecake (Printable Version)

# What You’ll Need:

01 - 1 1/2 cups crushed graham crackers.
02 - 1/2 cup packed brown sugar.
03 - 5 tbsp melted unsalted butter.
04 - 1 tsp pure vanilla extract.
05 - 32 oz softened cream cheese.
06 - 1 cup regular white sugar.
07 - 1/4 cup tangy sour cream.
08 - 3 eggs at room temp.
09 - 3/4 cup cold heavy cream.
10 - 3 tbsp cornstarch powder.
11 - 2 tsp good vanilla extract.
12 - For the top if you want:.
13 - 1 lb fresh strawberries.
14 - 3/4 cup plain white sugar.
15 - 1 tbsp squeezed lemon juice.
16 - 1/4 cup plain water.
17 - 1 tsp pure vanilla flavor.

# Steps To Make It:

01 - Get your oven hot at 325°F. Butter your 9-inch springform and wrap the outside with aluminum foil.
02 - Combine graham bits, melty butter, vanilla, and brown sugar. Push firmly onto bottom and up sides of pan.
03 - Whip cream cheese till it's light. Dump in sugar, add eggs one by one, then mix in sour cream, vanilla, cream, and cornstarch.
04 - Set pan in water bath, cook for 85-90 mins until the outside sets but middle still wobbles a bit.
05 - Let it sit in turned-off oven for 10 mins, then another 10 mins on counter, then chill in fridge for 6 hours.
06 - Simmer diced strawberries with sugar, lemon juice, water, and vanilla about 10-15 mins until it gets thick.
