Beef Barley Crockpot Soup (Printable Version)

# What You’ll Need:

01 - 1 pound cubed beef for stew.
02 - 3 carrots, chopped.
03 - 3 celery ribs, cut into pieces.
04 - 1 large onion, chopped small.
05 - 3 garlic cloves, finely chopped.
06 - 8 cups beef stock.
07 - 14.5 ounces tomatoes, diced.
08 - ¾ cup barley pearls.
09 - 1 teaspoon thyme, dried.
10 - 2 bay leaves.
11 - Salt and pepper as needed.

# Steps To Make It:

01 - Chop up your veggies and finely cut the garlic.
02 - Throw everything into your crockpot.
03 - Set on low for 8-10 hours or high for 4-5 hours until the meat gets soft.
04 - Take out bay leaves and add more salt if needed.

# Extra Notes:

01 - If you want, brown the meat before adding.
02 - Pearl barley gives the best results.
03 - You can use fresh thyme if you have it.
