Onion Gnocchi French Style (Printable Version)

# What You’ll Need:

01 - 1½ tbsp extra virgin olive oil.
02 - 2½ tbsp salted butter.
03 - Sea salt, as needed.
04 - Cracked black pepper, as needed.
05 - 24 oz packaged gnocchi.
06 - 2 lbs yellow onions, cut in half and sliced thin.
07 - 1½ tbsp chopped fresh thyme leaves.
08 - 6 cloves garlic, finely chopped.
09 - ½ cup Sauvignon Blanc or similar dry white wine.
10 - 2½ tsp dijon mustard.
11 - 2½ tbsp plain flour.
12 - 1 tsp worcestershire sauce.
13 - 1 big bay leaf.
14 - 2½ cups low sodium beef broth.
15 - 1½ cups freshly shredded gruyere cheese.
16 - ½ cup freshly grated parmesan.

# Steps To Make It:

01 - Warm up oil and butter on medium. Throw in onions and stir now and then for 45-60 mins until they turn deep brown. Add small splashes of water if they stick.
02 - When onions have cooked about 40 mins, get water boiling with some salt for your gnocchi.
03 - Put thyme and garlic in with your onions. Let them cook together for 2 mins.
04 - Splash in the wine and let it bubble away for 3-4 mins until it's about half gone.
05 - Sprinkle flour over everything and stir for 1-2 mins. Mix in the dijon and worcestershire.
06 - Pour in beef broth and drop in the bay leaf. Let it come to a boil, then turn down to simmer for 6-7 mins. Throw in salt and pepper to your liking.
07 - Cook your gnocchi in the hot water until they pop up to the top. Drain and dump them into your sauce.
08 - Scatter both cheeses on top. Stick under the broiler for 3-5 mins until bubbly and melty.
