Luau Pineapple Rice (Printable Version)

# What You’ll Need:

01 - Chopped green onions, about 2 tbsp, if you wanna toss some on top.
02 - Handful of macadamia nuts, toasted if you like, to finish (totally up to you).
03 - One cup fresh pineapple, diced.
04 - Quarter teaspoon white pepper.
05 - Teaspoon of chicken bouillon or chicken powder.
06 - Half cup unsweetened coconut, shredded.
07 - Half cup of ham, sliced up thin.
08 - Two cloves garlic, minced up.
09 - Teaspoon fresh grated ginger or use a dash of dried if that's easier.
10 - Half a cup chopped onion.
11 - Two tablespoons coconut oil.
12 - One and a half cups water (only if making rice from scratch).
13 - A cup of raw basmati rice or take two cups already cooked rice.

# Steps To Make It:

01 - Get it hot all the way through, sprinkle with your toppings, then dig in.
02 - Toss in the pineapple, those green onions, and your toasted coconut at the end.
03 - Put the rice in next, add bouillon and white pepper, then stir until everything looks even.
04 - Ham goes in once it smells good, let it get a little color.
05 - Cook up the onion, garlic, and ginger in coconut oil until your kitchen smells awesome.
06 - If you're using nuts, toast them and chop them up while you wait.
07 - Toast the coconut in a dry pan, pull it off the heat when it's golden.
08 - If your rice isn't made already, cook it first. Cool it off in the fridge so it won't get sticky later.

# Extra Notes:

01 - Chilled leftover rice doesn't gum up like fresh rice.
02 - Pineapple from a can works fine but fresh is sweet and tangy too.
03 - Spam totally works if you're out of ham.
04 - Stick with unsweetened coconut for the best flavor.
