Middle Eastern Date Treats (Printable Version)

# What You’ll Need:

01 - 1 cup crushed almonds.
02 - 1 1/4 cups rice flour.
03 - 1 tsp salt.
04 - 1/4 tsp cinnamon.
05 - 1/4 tsp cardamom powder.
06 - 1/3 cup (80ml) melted coconut oil.
07 - 1/3 cup (80ml) any milk alternative.
08 - 250g pitted soft dates.
09 - 1/2 cup (120ml) water.
10 - 1 tsp cinnamon.
11 - 1 tsp cardamom.
12 - Tiny bit of salt.
13 - Sesame seeds for sprinkling.

# Steps To Make It:

01 - Simmer dates with water on medium-low heat, smashing them until they turn into a smooth paste.
02 - Combine almonds, flour, salt and spices together. Pour in oil and milk until you get a workable dough. Pop in fridge for 20-30 minutes if it feels too sticky.
03 - Divide and flatten dough into two 28x18cm sheets. Smear your date mixture across each surface.
04 - Using parchment paper, roll everything into logs. Stick in freezer for 30 minutes then cut into half-inch thick rounds.
05 - Sprinkle some sesame seeds on top. Stick in a 350°F oven for 20 minutes till they look golden brown.
06 - Let them sit till fully cooled before eating. Keep them in the fridge afterward.
