Greens Pesto (Printable Version)

# What You’ll Need:

01 - 4 cups (tightly packed) washed and dried radish greens.
02 - 4 garlic cloves, minced finely.
03 - Juice from half a big lemon (about 2 tbsp).
04 - 1/2 cup nuts - try almonds, macadamias, pistachios or pignolis.
05 - 1/2 cup grated fresh Parmesan.
06 - 1/3 cup good olive oil, with extra on hand if needed.
07 - Salt and fresh ground pepper to your liking.

# Steps To Make It:

01 - Put the first 6 items into your food processor. Work in smaller batches if it's too full.
02 - Run until it's nice and smooth, making sure to scrape down the sides when needed.
03 - Pour in oil until you get the right sauce thickness. Add salt and pepper to taste.

# Extra Notes:

01 - Yields 2 cups total.
02 - For folks with nut allergies, try sunflower or pumpkin seeds instead.
03 - Nutritional yeast works as a dairy-free swap for the parmesan.
04 - You can freeze this for up to half a year.
