Greek Spud Delights (Printable Version)

# What You’ll Need:

01 - 4 large baking potatoes.
02 - 2 tablespoons virgin olive oil.
03 - 1 teaspoon sea salt.
04 - 1 finely diced shallot.
05 - 3 crushed garlic cloves.
06 - 2 sliced green onions.
07 - ½ teaspoon dried dill weed.
08 - 4 cups raw spinach leaves.
09 - ½ teaspoon regular salt.
10 - Freshly ground black pepper.
11 - ½ cup thick sour cream.
12 - ¼ cup whole milk.
13 - 4 ounces crumbled feta.
14 - Grated Parmesan for topping.
15 - Fresh chopped chives.

# Steps To Make It:

01 - Set your oven to 425°F. Poke holes in potatoes, coat with oil and salt.
02 - Let potatoes cook for 60-70 minutes till soft inside.
03 - Cook shallot, garlic, onions and dill together. Toss in spinach and wilt it down.
04 - Dig out potato insides, blend with cooked spinach mix, sour cream, milk and feta chunks.
05 - Stuff mixture back into potato shells, pop in 400°F oven for 15-20 minutes.
06 - Sprinkle with Parmesan and fresh chives before serving.
