Spicy Meat Bake (Printable Version)

# What You’ll Need:

01 - 1 pound ground beef (85/15 ratio).
02 - 1/2 pound spicy Italian sausage.
03 - 3 tablespoons olive oil.
04 - 2 1/2 cups chopped white onion.
05 - 2 cups chopped green bell pepper.
06 - 1 jalapeño, finely chopped.
07 - 2 tablespoons crushed garlic.
08 - Spices (salt, pepper, cumin, coriander, chili powder, oregano).
09 - 10 ounces Rotel tomatoes, liquid removed.
10 - 3 large eggs.
11 - 1 cup Greek yogurt.
12 - 1/2 cup flour.
13 - 2 teaspoons baking powder.
14 - 2 1/2 cups various shredded cheeses mixed together.
15 - 1 cup chopped scallions.
16 - 1/4 cup cilantro.

# Steps To Make It:

01 - Cover springform pan with parchment paper and grease thoroughly.
02 - Cook beef and sausage until brown, pour off extra fat.
03 - Cook veggies with spices until they're just tender but still firm.
04 - Combine eggs, yogurt, flour, and baking powder to form a smooth mixture.
05 - Put down layers of mixture, meat combo, and cheese; finish with herbed cheesy mixture on top.
06 - Put in oven at 350°F for 45 minutes, then switch to broil for a golden top.
