Warm up your oven to 400°F and slice your apples super thin.

Spread honey on parchment first, arrange apple slices on top, then place pastry rectangles over everything.

Coat pastry with beaten egg, pop in oven for 15-20 mins until they're nice and golden.

Let them cool a bit, turn them over, stick back in oven if needed, then add a light sugar dusting.
