Signature Brulee (Printable Version)

# What You’ll Need:

01 - 2 cup heavy cream (33%).
02 - 1 tablespoon dark brown sugar.
03 - 1 teaspoon vanilla bean paste.
04 - ⅛ teaspoon sea salt.
05 - 1 teaspoon pure vanilla extract.
06 - 6 egg yolks.
07 - ⅓ cup white sugar.
08 - ½ cup white sugar for the caramelized top.

# Steps To Make It:

01 - Heat your oven to 325℉. Set your ramekins inside a big baking dish for the water bath.
02 - Mix cream, dark brown sugar, vanilla paste and salt together. Warm until just bubbling. Stir in vanilla extract and let sit for 10 minutes.
03 - Beat egg yolks with sugar till pale and fluffy. Slowly pour in warm cream while constantly stirring to avoid scrambling.
04 - Transfer mixture to your dishes, tap to get rid of air bubbles. Put in water bath filled halfway up the sides.
05 - Pop in oven for 25-30 minutes until the sides are firm but middle still wobbles. Let cool and then chill for at least 5 hours.
06 - Sprinkle sugar on top and burn with torch until golden brown before you serve.

# Extra Notes:

01 - You can make these two days ahead of time.
02 - The water bath helps everything cook nice and evenly.
03 - Don't caramelize the sugar until right before eating.
