Heat your oven to 325℉. Set your ramekins inside a big baking dish for the water bath.

Mix cream, dark brown sugar, vanilla paste and salt together. Warm until just bubbling. Stir in vanilla extract and let sit for 10 minutes.

Beat egg yolks with sugar till pale and fluffy. Slowly pour in warm cream while constantly stirring to avoid scrambling.

Transfer mixture to your dishes, tap to get rid of air bubbles. Put in water bath filled halfway up the sides.

Pop in oven for 25-30 minutes until the sides are firm but middle still wobbles. Let cool and then chill for at least 5 hours.

Sprinkle sugar on top and burn with torch until golden brown before you serve.
