Plant-Based Legume Stew (Printable Version)

# What You’ll Need:

01 - 2 cups dry lentils.
02 - 3 carrots, chopped.
03 - 3 celery stalks, chopped.
04 - 1 big onion, chopped small.
05 - 3 garlic cloves, finely chopped.
06 - 14.5 ounces canned diced tomatoes.
07 - 6 cups veggie broth.
08 - 4 cups fresh spinach.
09 - 1 teaspoon ground cumin.
10 - 1 teaspoon ground coriander.
11 - 1 teaspoon paprika powder.
12 - Salt and pepper to taste.
13 - Juice from 1 fresh lemon.

# Steps To Make It:

01 - Cut up all veggies and wash the lentils well.
02 - Throw everything in the crockpot except the spinach and lemon juice.
03 - Let it simmer on low for 6-8 hours or high for 3-4 hours.
04 - Take half the soup and blend it up for a smoother mix.
05 - Mix in spinach till soft, then add the lemon juice last.
