Veggie Warm Salad (Printable Version)

# What You’ll Need:

01 - 1 purple onion.
02 - 1 tiny butternut squash.
03 - 10 little potatoes.
04 - 2 orange root veggies.
05 - 2 white root veggies.
06 - 1 tablespoon veggie oil.
07 - Ocean salt and crushed black pepper.
08 - 4 big pinches arugula/watercress mix.
09 - 1 tablespoon veggie oil.
10 - 2 tablespoons dark vinegar.
11 - 2 tablespoons chopped fresh basil leaves.
12 - 2 tablespoons minced fresh cilantro.
13 - 2 tablespoons diced fresh parsley.
14 - 30g mild feta.

# Steps To Make It:

01 - Warm up your oven to 400°F or 200°C regular or 180°C with fan or Gas mark 6.
02 - Slice all veggies into big chunks. Mix them with oil and add salt and pepper.
03 - Put everything on a tray and bake for about 35-40 mins.
04 - Stir together oil, dark vinegar, fresh herbs, salt and pepper for a tasty sauce.
05 - Put greens in each bowl, stack roasted veggies on top, pour sauce over and break up feta chunks to finish.

# Extra Notes:

01 - Works with whatever veggies you've got for roasting.
02 - Throw in some beans or cooked chicken if you want more protein.
03 - Skip the cheese or use a plant-based option to make it vegan.
