Zesty Zucchini Loaf (Printable Version)

# What You’ll Need:

01 - 1½ cups shredded zucchini.
02 - ¼ cup chopped green onions.
03 - 2 eggs, large.
04 - ¾ cup creamy sour cream.
05 - ¼ cup melted butter.
06 - 1½ cups shredded cheddar.
07 - 2 cups all-purpose flour.
08 - 1½ teaspoons powder for baking.
09 - ½ teaspoon soda for baking.
10 - ½ teaspoon regular salt.

# Steps To Make It:

01 - Throw together the zucchini, green onions, eggs, sour cream, melted butter and cheddar in a bowl.
02 - Stir flour, powder for baking, soda for baking and salt in another bowl.
03 - Fold the dry stuff into the wet mixture. Add to a greased loaf pan sized 9x5.
04 - Cook in a 350°F oven for about 50-70 mins till it passes the toothpick test.

# Extra Notes:

01 - Keep the zucchini moisture intact.
02 - Try adding basil or pepper jack for variety.
03 - Tastes great when it's still warm with a pat of butter.
