Get your oven going at 350°F and put parchment paper in an 8-inch square baking dish.

Stir together flour, oats, brown sugar, baking soda, and salt in a bowl.

Pour in the melted butter and vanilla, then stir until everything's combined.

Take out 3/4 cup of the mixture for later and keep it cold.

Push the rest of the dough into your pan and bake it for 14-16 minutes until it's golden brown.

Take the crust out and let it cool down for 15 minutes.

Toss your diced apples with the lemon juice in a bowl.

Mix white sugar, cinnamon, and starch together, then stir into the apple mixture.

Spread the apple mix over your cooled crust and drizzle 1/4 cup of caramel on top.

Break up the cold dough you saved and scatter it over everything.

Put it back in the oven for 40-42 minutes until the top looks golden and crisp.

Let it cool all the way, then pop it in the freezer for 10 minutes to firm up.
