Cauliflower Ham Soup (Printable Version)

# What You’ll Need:

01 - 2 Tbsp cooking oil (canola or avocado).
02 - 1 tiny yellow onion.
03 - 3/4 lb diced ham.
04 - 4-5 cloves garlic, smashed.
05 - 2 lb cauliflower head.
06 - 3 Tbsp regular flour.
07 - 1 tsp ground sage.
08 - Salt.
09 - Freshly ground black pepper.
10 - 1 bay leaf.
11 - 3 1/2 cups chicken broth.
12 - 1/2 cup heavy cream.
13 - 4 oz grated sharp white cheddar.

# Steps To Make It:

01 - Chop ham and onion. Cut up the cauliflower into tiny florets and toss the stem.
02 - Heat oil and cook onion till see-through. Throw in ham and garlic, let them get nice and fragrant.
03 - Toss in cauliflower and let it cook a bit. Dust with flour and stir everything together.
04 - Pour in broth, drop in bay leaf, and add your spices. Let it bubble for 20-25 minutes.
05 - Mix in cream and toss in cheese. Let it cook a bit more till the cheese gets all melty.

01 - Works great with gluten-free flour swaps at the same amount.
02 - Stays good in the fridge for 3-4 days.
03 - You can freeze it but it might look funky when you thaw it out.
