Parmesan Sausage Italian Soup (Printable Version)

# What You’ll Need:

01 - 1 pound sweet or spicy Italian sausage.
02 - 1 tablespoon extra virgin olive oil.
03 - 1 onion, diced.
04 - 3 garlic cloves, crushed.
05 - 2 carrots, cut into small cubes.
06 - 2 celery stalks, finely chopped.
07 - 4 cups chicken stock.
08 - 14.5 ounces canned diced tomatoes.
09 - 1 cup whipping cream.
10 - 1 cup freshly grated Parmesan.
11 - 2 cups fresh spinach leaves.
12 - 1 teaspoon dried Italian herb mix.
13 - ¼ teaspoon crushed red pepper flakes.
14 - Salt and black pepper to your liking.

# Steps To Make It:

01 - Heat oil and cook sausage until it's golden brown, then take it out and put aside.
02 - Throw in all the veggies and cook till they're tender, then add garlic and cook for just a minute.
03 - Pour in stock, add tomatoes, cooked sausage and all the spices. Let it bubble away for 15 minutes.
04 - Mix in the cream and Parmesan. Drop in spinach and stir till it shrinks down. Add salt and pepper as needed.
