Salmon Feta Patties (Printable Version)

# What You’ll Need:

01 - Tzatziki sauce for topping if you like.
02 - A few lemon wedges, only if you want them.
03 - Olive oil, just enough for your pan.
04 - Shake on some salt and black pepper.
05 - 1 teaspoon dried oregano.
06 - The zest from one lemon, about a teaspoon.
07 - Squeeze out 1 tablespoon of lemon juice.
08 - Beat up 2 big eggs.
09 - 1/2 cup of breadcrumbs.
10 - 1/3 cup crumbled feta cheese.
11 - 1 tablespoon fresh dill, skip it if you want.
12 - 2 tablespoons chopped parsley.
13 - Two garlic cloves, chopped up small.
14 - 1/4 cup of diced red onion.
15 - 1 cup chopped fresh spinach or go with 1/2 cup frozen.
16 - Either a pound of salmon fillet (cooked) or drain two 6oz cans of salmon.

# Steps To Make It:

01 - Top them off with your tzatziki and a squeeze of lemon if you're in the mood.
02 - Fry your patties for about 3-4 minutes per side. They should look nice and golden brown when they're ready.
03 - Add a good splash of oil to your skillet, then get it warm over medium heat.
04 - Shape your mix into patties, roughly three inches wide and half an inch thick.
05 - Now toss the salmon, spinach, onion, garlic, your herbs, feta, breadcrumbs, eggs, and all your spices into a big bowl and give it all a good stir.
06 - Wilt spinach in the pan for two minutes, then cool it off and squeeze out the water.
07 - If you're cooking your own salmon, bake it at 375°F for around 12-15 minutes. Let it cool off, then flake it into pieces.

# Extra Notes:

01 - Fresh or canned salmon both work great.
02 - Spinach should be squeezed dry before mixing in.
03 - Baking is a solid option if frying isn't your thing.
