Blot brisket till it's dry then rub seasoning mix all over every side. Cover with foil and stick in the fridge overnight.

Take meat out 60 minutes before cooking time. Get your oven hot at 300°F.

Set up foil in an X shape on the rack in your baking dish. Put brisket with fat facing up and wrap it loosely.

Cook for roughly 1 hour 15 minutes for each pound until the middle hits 180°F.

Unwrap the top of the foil and let it cook another 45-60 minutes.

Let it sit wrapped up for half an hour before cutting across the grain.
