Flaky Bacon Bake (Printable Version)

# What You’ll Need:

01 - 1 sheet of frozen puff pastry.
02 - 4 bacon slices, chopped into bits.
03 - 1 thinly sliced onion.
04 - 1 pound of spuds (about 2-3 small ones), skinned and cut into thin slices.
05 - 1 teaspoon of both chopped chives and parsley.
06 - 4 oz shredded cheese (try using cheddar, colby jack, or maybe Jarlsberg).
07 - A bit of salt and fresh cracked pepper.
08 - Whatever dried herbs and spices you like.
09 - 1 egg for brushing the top.

# Steps To Make It:

01 - Heat your oven to 350°F. Make sure the pastry's thawed but still cool. Get all your stuff ready.
02 - Fry bacon till it's nice and crispy. Put it on paper towels to soak up extra fat.
03 - Throw onions in about 1/2 tablespoon of the bacon drippings and cook till they're soft and golden brown.
04 - Toss potato slices with some salt, pepper, and herbs. Let them sit a bit to get some water out, then drain them well.
05 - Stretch the pastry into a 12x12 inch square. Stack potatoes, onions, bacon, and cheese on one half. Don't cover the edges.
06 - Fold the empty half over, press edges with egg wash and a fork to seal. Make some cuts on top and brush with beaten egg.
07 - Stick it in the oven for 45 minutes till it's all puffy and golden brown.

# Extra Notes:

01 - You can make two at once if you've got a big enough baking tray.
02 - Cut everything up early if you want, but don't put it together until you're ready to bake.
03 - Make sure you get rid of extra potato water or you'll end up with soggy dough.
