Heat your oven to 350°F. Make sure the pastry's thawed but still cool. Get all your stuff ready.

Fry bacon till it's nice and crispy. Put it on paper towels to soak up extra fat.

Throw onions in about 1/2 tablespoon of the bacon drippings and cook till they're soft and golden brown.

Toss potato slices with some salt, pepper, and herbs. Let them sit a bit to get some water out, then drain them well.

Stretch the pastry into a 12x12 inch square. Stack potatoes, onions, bacon, and cheese on one half. Don't cover the edges.

Fold the empty half over, press edges with egg wash and a fork to seal. Make some cuts on top and brush with beaten egg.

Stick it in the oven for 45 minutes till it's all puffy and golden brown.
