Common Questions

→ Why freeze the filling?
Freezing makes the filling firm enough to work with and wrap inside the mochi. It also helps everything stay in place during assembly.
→ Why strain the dough mixture?
Straining gets rid of any clumps and makes the mochi perfectly smooth. This step can't be skipped if you want that nice chewy bite.
→ Can I use different fillings?
Absolutely! Swap strawberry jam for any other fruit spread or mix up your own cream cheese blends. Just keep the amounts about the same for the right texture.
→ How long do these keep?
They'll stay good in the fridge for about 3 days in a sealed container. Just know they'll get a bit firmer each day.
→ Why dust with rice flour?
Mochi gets super sticky. The rice flour coating stops it from gluing itself to everything and makes it way easier to handle.
